The ancient recipe of red yeast rice

To create red rice, find a place with red soil and dig a deep pit. Surround the pit with bamboo mats and pour in japonica rice. Press heavy stones on top to facilitate fermentation and the development of the rice's distinctive red coloring. After three to four years, the rice will have a purple-red outer skin and a red interior. Be sure to avoid rice with white spots for the best quality.
