To produce Red Yeast Rice, Monascus purpureus is cultivated on polished rice. The first step involves soaking the rice in water until it is completely saturated. Once the rice is soaked, it can be directly inoculated by mixing it with powdered red yeast rice containing M. purpureus. The mixture is then incubated at room temperature for several days. Throughout this incubation period, the rice grains become fully cultured with M. purpureus, resulting in a bright red core and reddish purple exterior for each grain. After complete culturing, the rice is dried and pulverized into a fine powder, which is then sold.
